Rise and Shine
Show mom she’s special this Mother’s Day with a hearty breakfast-in-bed recipe.
Ingredients: •½ c. flax seed meal •¼ c. wheat germ •¼ c. all-purpose flour •4 tsp. baking powder •1 Tbsp. sugar •¼ tsp. salt •2 eggs, beaten •1¾ c. skim milk •¼ c. Canola oil •¼ c. unsweetened applesauce •1 tsp. vanilla extract •1 c. whole wheat pastry flour
Directions: In a large bowl, whisk together the eggs, milk, oil, applesauce and vanilla. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar and salt until batter is smooth. Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches and cook until crisp and golden brown. With preparation and cook time, waffles are ready to serve in 15 minutes.
Spring Crafts for All

Materials: •3 cardboard egg cups •6-inch-square piece of green craft foam •Toothpick •Scissors •3 green chenille stems •Acrylic paints in pink, red and light blue •6-inch-by-3-inch piece of light purple tissue paper •6-inch-by-3-inch piece of yellow tissue paper •6-inch-by-3-inch piece of blue tissue paper
What to Do: Using an empty egg carton, cut out three egg cups and trim them down. Paint one of the egg cups red, one pink and the last one light blue. Set aside to dry. Cut each piece of tissue paper in half so that you now have two 3-inch-by-3-inch squares of each color. Cut 4-inch-long almond shaped leaves from the green craft foam. Use a toothpick to poke a hole in the center of each leaf. Use scissors to give your leaves more shape by trimming them into an hour glass shape. Poke a chenille stem into the hole in the center of the leaf. Repeat for the other two leaves. When egg cups are dry, use toothpick to poke a hole in the bottom of each egg cup. Insert the top of the chenille stem into the hole in the egg cup. Pull the egg cup about a fourth of the way down the chenille stem. Insert the top of the chenille stem into the center of the two tissue paper squares. Run the egg cup up to the tissue paper. The tissue paper will tuck inside the egg cup. Bend the end of the chenille into the tissue paper to hold everything in place. Adjust leaf by moving it up or down until it’s where you want it.

What to Do: Using a mix of potting soil, fill up each boot to the tip of the toes. Add in 2 or 3 flowers to the soil. Depending on size of the boot, you can add more or less flowers. Then add your new addition to your garden.

Memorial Day Merriment
Share the spirit of Memorial Day with some great barbecue ideas. Start with this Summer Chicken Burgers recipe.
Ingredients: •1 ripe avocado, sliced into halves •1 Tbsp. lemon juice •1 Tbsp. butter •1 large Vidalia onion, sliced into rings •4 boneless, skinless chicken breasts •Salt and pepper, to taste •4 hamburger buns •4 Tbsp. mayonnaise •4 slices provolone cheese
Directions: In a small bowl, combine sliced avocado and lemon juice. Add water to cover; set aside. Preheat an outdoor grill for high heat and lightly oil grate. Heat butter in a large heavy skillet over medium-high heat. Saute the onions until browned and caramelized; set aside. Season the chicken with salt and pepper. Place on grill, and cook until no longer pink and juices run clear, about 5 minutes on each side. Place buns on grill just long enough to toast them. Spread buns with mayonnaise to taste, then layer with chicken, caramelized onion, provolone and avocado. For images or help with the recipe, visit www.allrecipes.com.
