Tom Valenti

Tom Valenti is the chef/owner of Manhattan’s acclaimed restaurants Ouest and The West Branch. He was diagnosed with diabetes more than 14 years ago, and after undergoing various stages of denial, anger and resignation, he created a diabetic cuisine that doesn’t skimp on flavor. Valenti lives in New York City with his wife.
